Product Overview
α-Amylase is derived from Bacillus subtilis through deep fermentation. It is widely used in industries such as beer production, monosodium glutamate, starch syrup, alcohol, fermentation, desizing in dyeing, animal feed, and fruit juice processing.
α-Amylase, systematically named 1,4-α-D-glucan glucanohydrolase, also known as liquefying amylase, liquefaction enzyme, and α-1,4-dextrinase, is a yellowish-brown solid powder or liquid ranging from yellowish-brown to deep brown, with a moisture content of 5%-8%. It is soluble in water and insoluble in ethanol or ether.
Production Process of α-Amylase
α-Amylase is produced through fermentation, primarily using microorganisms such as Bacillus subtilis, Aspergillus niger, Aspergillus oryzae, and Rhizopus. Like other enzymes, α-Amylase has substrate specificity. Different sources of amylase react with different substrates. Generally, α-Amylase exhibits high specificity for starch and its derivatives, including amylopectin, amylose, cyclodextrins, glycogen, and maltotriose (Gupta et al., 2003).
Function and Application
α-Amylase is used to hydrolyze starch for producing glucose syrup, maltose, and other products.
It is used in the production of dextrins, beer, rice wine, alcohol, soy sauce, vinegar, fruit juice, and monosodium glutamate.
In bread production, it improves dough by reducing viscosity, speeding up fermentation, increasing sugar content, and delaying bread staling.
It is used in the pretreatment of cereal raw materials in infant food.
It is used in vegetable processing.
Usage: For Bacillus subtilis α-Amylase (6000 IU/g), the recommended addition is about 0.1%.
